Pumpkin Fool
No, I'm not talking about being cuckoo for gourds. I'm talking about the dessert. A fool is fruit stirred into whipped cream and it is sublime. This summer I made a strawberry fool for Ellie's party and it was a huge hit! So I thought I'd take the best parts of pumpkin pie and make a pumpkin fool. It is so easy and yummy!Ingredients:
1 can pumpkin (not pumpkin pie filling)
1/2 c. (or to taste) powdered sugar plus 2 tbs
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp cloves
1 TBS maple syrup
1.5 c. whipping cream
1/2 tsp vanilla extract
Stir the pumpkin, 1/2 c sugar, spices, and maple syrup with a wisk until smooth.
In a separate bowl, beat the cream to soft peaks. (I did mine to very stiff and it was too stiff. you want it to be lush so I'd go somewhere between soft and stiff peaks). Add about 2 TBS powdered sugar and the vanilla about 1/2 way through the whipping process.
Gently fold the pumpkin into the whipped cream. Do not over stir. You want it to be streaky. You are not making mousse so leave it just barely blended.
And of course, alter the spices and sweetness to your taste. Maybe this isn't a recipe exactly. Maybe it's just a diving board to jump off of into sweetened whipped cream pumpkin goodness. You make it yours.
I sprinkled graham cracker crumbs on top because I forgot that I had Nilla Wafers in the house. This is made to be scooped up with Nilla Wafers!! And I know it isn't the prettiest dessert but what can I say? Eat it with your eyes closed. And if you think it's not pretty in person, just try to take a picture of it! HA HA HA! Anyway, it's yummy and since I hate pie crust this is a better alternative for me than pumpkin pie.
