Pumpkin Cobbler (Fall Dessert)

I recently made one of my favorite fall desserts and I thought I'd share it with you all!  It's a pumpkin cobbler and it is easy and yummy!  Plus, we all need extra veggies in our diets, don't we?  I mean, I can go vegetarian if it's like this!








Pumpkin Cobbler


1 large canned pumpkin (not pumpkin pie filling)
1 (12 fluid ounce) can evaporated milk
4 eggs, lightly beaten
1  cup white sugar
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1 teaspoon salt
1 (18.25 ounce) package yellow cake mix
1 cup chopped pecans (or so)
1 stick of butter, melted
1 tablespoons brown sugar


Preheat oven to 350 degrees. Lightly grease a 9 x 13 baking pan.

Mix together the pumpkin, spices, sugar, eggs, salt, and evaporated milk. Stir until blended. Pour into the pan.
Sprinkle the dry came mix on top of the pumpkin mixture, top with pecans.
Pour melted butter over cake mix and nuts and sprinkle with brown sugar.
Bake for 1 hour 15-20 minutes. Serve with whipped cream or vanilla ice cream.
