Frozen Strawberries-n-Cream Bites
We served a variety of desserts at Ellie's birthday party a few weeks back. One of the more popular desserts was a strawberry fool. If you don't know what a fool is you don't know what you are missing! Think sweetened mashed fruit stirred into sweetened whipped cream. That's it! So easy and soooooo good. It's the perfect summertime dessert. But could I make it into a frozen dessert? Hmmmmm. Yup!
I was left with some strawberry fool leftover and wasn't sure what to do with it. Then the light bulb went off in my head and I grabbed the fool and some Nilla Wafers. I dolloped some of the fool in between who wafers, froze them, and then rolled them in sprinkles.
So there really isn't a recipe. I do it all by taste. But if you want to try making some I would do 1 cup heavy cream, whipped and lightly sweetened to taste with the sweetener of your choice. Then cook 2 cups chopped fresh strawberries until soft and there is a lot of juice. If you need to add a bit of water that's cool. Lightly sweeten the berries and then mash them up a bit. Cool. Gently stir the berries into the whipped cream. That's it. All done. You can use frozen berries too. Just defrost, sweeten and mash, no cooking needed.
Then you just put that between Nilla wafers, graham crackers, sugar cookies etc. and freeze on a cookie sheet. Then you can wrap the bites in plastic wrap and store in the freezer. So yummy!
The girls LOVED them. Especially since they are small so they each got to eat 2. I plan on trying them with peaches next!
