Caesar Chicken: Weeknight Meal Idea

It can be so hard to put a hot, homemade meal on the table during the week.  By the time everyone comes home, backpacks are dealt with, homework is done, etc. there is little time to spend hours at the stove. I find myself in that situation last week and threw together a quick and easy meal that we all ended up loving. My husband called it restaurant quality! 





 I threw it together so the amounts are approximations.  

Ingredients:  

4-6 thin sliced chicken breasts, skinless and boneless
1/2 cup flour (more or less depending on the amount of chicken or size of breasts)
a few tablespoons olive oil
1 cube chicken bullion with 3/4 c. water or 3/4 c. chicken broth. I used the bullion cube.
1/2 c-3/4 Caesar dressing. I used Ken's Tableside Caesar which I like the best)

Directions:
1. Place the flour in a shallow bowl or plate. Mix in a bit of salt and pepper.  
2. Dredge each breast in the flour, making sure to coat each side well.  Shake off any excess.
3. Heat the olive oil in a large pan. Wait until the oil is hot hot hot hot and then brown the chicken on both sides. Remove from pan and set aside.
4. Place the bullion cube and water (or broth) in the pan and scrape to deglaze.
5. Place the chicken back into the pan and pour the Caesar dressing over it.
6. Cover, bring to a boil, and simmer the chicken for 20 minutes or until cooked through.

I made some egg noodles, which I seasoned with butter, fresh parsley, and salt and pepper to serve on the side along with some steamed broccoli.
 



I'm keeping this in my cooking repertoire since it was so easy and needed so few ingredients.

  1. Looks yummy! I make something similar. Jeff and the kids are huge fans of ranch dressing. So I mix bread crumbs with an envelope of the dry ranch dressing mix and then bread chicken breasts and bake. Super easy and they love it.
