Peanut Butter Maple Overnight Oats--Easy Breakfast

Breakfast is my favorite meal of the day. I could easily skip dinner but I can't remember ever skipping breakfast. I just love it that much. However, I don't love mornings and so that is where overnight oats come in as my quick and easy breakfast of choice lately.

What are overnight oats you ask?  You can read more about them here where I rounded up some recipes that sounded delicious. But I recently created my own and WOW, it is so yummy it almost feels wrong to eat it at breakfast!


If you've never tried maple syrup and peanut butter together you are missing out on a great combination. We've always eaten peanut butter on pancakes and waffles and I thought I would transfer those flavors to overnight oats and it turned out fantastic!


I do not use organic, natural pb or anything else that is ultra natural but if that's your thing, have at it. This recipe will work with any kind of nut butter, milk, and yogurt! And you can play with the proportions. If you like a firmer oatmeal, then you can reduce the yogurt and milk.

Peanut Butter Maple Overnight Oats Breakfast

In a medium jar with a tight lid (or airtight plastic container but that isn't as cute as eating from a jar), combine:

  • 1/2 cup old fashioned oats (not instant)
  • 1/2 cup vanilla fat free yogurt (I used Stonyfield Farms)
  • 1/2 cup milk (I used 1% organic)
  • 2 packets of Splenda (or about 1.5 TBS sugar)
  • 1 TBS maple syrup (If you use REAL maple syrup you can reduce the sweetener. I used the light-fake-could-be-maple-syrup-except-it-is-corn-syrup stuff.)
  • 1Tbs creamy peanut butter 
  • dash of salt


Cover and shake to combine all the ingredients thoroughly. Leave the jar in the fridge overnight or for 6-8 hours. In the morning, you'll treat yourself to a creamy, almost-indulgent breakfast treat!

I wish I had more pictures of the finished product but when I tried to move my dish to get better light I dropped it on the floor.  Splat!  Pixie was happy though!

I really do hope you'll try this or one of the other recipes I rounded up!
